Our gastronomic proposal

Seasonal home-cooked dishes, prepared using the best products the region has to offer

We support local commerce; because we’re committed to our environment and to sustainability, and above all because we’re familiar with the producers who we know have small businesses, work with craft processes and offer top-quality products.

Produce we work with

Vinos de Cebreros

We’re located in a traditional wine-growing area, where old vines are being revived to create quality wines, which for the last year have been included in the Vinos de Cebreros Designation of Origin. The key grape varieties are Grenache and Albillo Real. You can try wines created by Daniel Ramos, Rubén Díaz and the Don Juan del Águila Co-operative, as well as classics like El Galayo, now produced by Soto Manrique. More information:

Cervezas Raíz Cuadrada

Brothers Israel and Héctor are the fourth generation of the García family to ferment cereal; their father, grandfather and great-grandfather were the bakers of their village, El Barraco. The brothers learnt about fermentation through making bread, left the village to study and work, and then came back to stay, launching the craft beer brewery that opened in 2019 and has already received several awards, both national and international.

Huevos camperos Redondo

The Redondo poultry farm was born in El Barraco in 1957, and their famous free-range eggs are used by restaurants such as Casa Lucio, Botín and the Ritz Hotel because they’re top-quality, thanks to high-welfare living conditions and natural feed.

Miel Oro del Alberche

La SAT Virgen de la Canaleja is a family firm, founded in Navatalgordo at the end of the 1990s, when they put their agricultural experience to good use in an exceptional project that combines economic, social and environmental profitability. They work together in the world of bees, using an extensive beekeeping system based on organic system of production, and harvesting the pollen and honey.

Quesos Elvira García

High quality cheeses made by the Alía García in El Barraco using raw goat’s milk. This is a family with a long tradition of working with goats; they began producing cheese to take advantage of the high quality of the milk produced by their animals. The result is their gourmet cheeses, which in their short history have already won numerous national and international prizes.

IGP Carne de Ávila

Beef from the Avileña-Black Iberian cow. Native to the centre of the Iberian Peninsula, this is a breed that's perfectly suited to making the most of the resources provided by the environment in which it lives. These are the jet black cows you can see grazing in the meadows of Ávila, and the quality of the meat they produce is guaranteed by the PGI (protected geographical indication) and its regulatory board.

Other seasonal products

We love to use seasonal products harvested from our own kitchen garden: tomatoes, courgettes, lettuce, peppers and more. It’s small, but the soil is extremely fertile, and it’s located in a sunny spot right by the reservoir. The amount of vegetables we produce is limited, which is why we rely on local shops to fully supply the restaurant. We like to discover and get to know new local producers, and we offer wine and beer tastings and pairings all year round where you can try products from Ávila.
